Our very own still dry cider crafted here at Wolds Wine Estate.
We used a wine making technique called Pied de Cuve to build a strong wild yeast culture from the apples in our Old Orchard. This culture was left to develop in the orchard for 5 days prior to the main pressing. We added the Pied de Cuve to 100% pressed apples and pears all hand picked from orchards on the Estate and from Stanton-on-the-Wolds, Keyworth and West Bridgford – a true neighbourhood blend. We then gave it time and love to let a natural fermentation turn our juice into a lovely fruity cider. We didn’t filter, just racked; leaving a cider with a slight natural haze. No concentrates, flavourings, or sweeteners – pure fruit in a glass.
This cider is tangy, zingy and acid-driven. The pears contain unfermentable sugars which provide a hint of natural sweetness. Subtle tannins on the tongue. A short to medium finish creates a very moreish aftertaste. Comes in at about 7%.
Presented in a 75cl corked wine bottle. Serve slightly chilled and drink in wine glasses.
